Mermaids at Shoal Bay Country Club is a relaxed beachside café and dining destination reimagined with a fresh coastal identity, designed to capture the ease and energy of Shoal Bay.

Located within one of Port Stephens’ most recognisable hospitality venues, the project called for an approach that could feel casual, memorable and commercially flexible, supporting early morning coffee, breakfast, takeaway, long lunches and relaxed afternoon dining.

Fabric Studio’s design response focused on strengthening the connection between the venue, the street and the beach, creating an inviting hospitality experience that feels distinctly local.

The refreshed spaces combine white textured walls, warm timber, green accents, coastal planting, patterned outdoor furniture and hand-painted signage to create a calm but characterful arrival. Inside, curved banquettes, terrazzo-style tables, olive green chairs, soft leather seating and custom wall murals bring warmth and personality to the dining room, while bi-fold openings connect the interior to the alfresco terrace and bay-side atmosphere.
